Chapter 3: Bend and Stretch, Reach for the Jars
Principle: The ability to be flexible and make substitutions saves time and money.
Philippians 4: 6 Do not be anxious about anything, but in everything, by
prayer and petitions with thanksgiving, present your requests to God.
Sometimes, despite our best efforts at planning and organization, we find
ourselves without something that is needed to complete the meal or the recipe. We can
panic (ineffective in every case), eat out (almost always more expensive), dash to the
store (tends to make the meal late and the family frustrated), run to the neighbors (not a
bad idea) or find a substitute.
Rather than complain or become anxious about what we have to work with, let
us lay out our ingredients and our needs before the Lord and like Hezekiah (2 Kings 18-
19), ask for the wisdom and help He is always ready to give to humble seekers. God’s
provision for our needs may not always come in the form we prefer, but thanksgiving
makes every meat more tender, and every fruit sweeter.
One practical kind of wisdom is the knowledge of what can stand in for
something else in a pinch. Knowing that everything does not have to be “perfect” in
order to work can be a helpful key to releasing our anxieties to God. Thank God for His
faithfulness, for His history of successful promise-keeping and ask Him to give you what
you need, whether it’s a new idea for what to fix for the meal, a substitute ingredient, or
a neighbor with a surplus and a generous heart.
Substitutions
Baking Powder: 1 t. = 1/2 t. cream of tartar + 1/4 t. baking soda OR Use 1/4 t. baking soda for every 1/3 c. sour milk, buttermilk or yogurt
Bisquick: 1 c. = 1 c. homemade baking mix OR 3/4 cup flour + 1 ½ t. baking powder + ½ t. salt +    2 T. shortening, margarine or oil
Baking Soda: 1 t. = 4 t. baking powder
Buttermilk or Sour Milk: 1 c. = 1 c. yogurt OR 1 c. warm milk + 1 T. vinegar or lemon juice (let sit for 10 minutes)
Celery Soup, cream of:  White sauce (See Universal Recipes, below) made with sautéed celery
Cheese Soup: White sauce (See Universal Recipes, below) with cheese, Worcestershire sauce, a few drops of Tabasco, and/ or cayenne pepper
